Course Objective 漢人移民台灣四百年，台灣酒業形成迄今不過百年。從農村副業成長為民間新興產業，1922年被收編為國家專賣事業，2002年又從國家專賣事業回歸到民間自由產銷。開放短短幾十年間，民間酒莊如雨後春筍般林立，各國進口酒類口味豐富多樣。本課程以台灣酒業發展史為主軸，兼述同時代的主要釀酒物產及消費文化，希望啟發學生深入瞭解並思考不同階段的台灣酒業發展歷史脈絡，關懷當代農業物產與社會飲食文化。 Han Chinese migration to Taiwan have been over four centries, the history of Taiwan’s liquor industry spans barely a hundred years. Evolving from a rural sideline business into a burgeoning private industry, it was incorporated into the state monopoly system in 1922, then return to free production and distribution in 2002. Within just a few decades of liberalization, local wineries flourished boomingly, while imported liquors from around the world added to the diversity of tastes. This course traces the historical development of Taiwan’s liquor industry, while also exploring contemporaneous brewing products and consumer culture. Participants are encouraged to gain a deeper understanding of the historical trajectory of Taiwan’s liquor production across different periods, and to reflect on contemporary agricultural products and food-and-drink culture in our society.
