Description The structures and characteristics of proteins are the most complicated and important among many macrobiomolecules. The most important function of proteins is to catalyze bioreactions in biosystems. Many natural or transgenic proteins have some disadvantages when they are applied in biotechnology, such as the limitations of specific activity, thermostability, and substrate specificity. Protein engineering aims to improve these characteristics of proteins based on the knowledge of the amino acid sequences and structures of proteins combined with genetic engineering, leading to increase their commercial values.
